About the Recipe
Indulge in the perfect collaboration of warm and cool with this S'mores Ice Cream Pie. A crunchy graham cracker crust combines perfectly with the rich, melty chocolate ice cream on the inside, topped off with a fluffy, golden-toasted marshmallow topping, reminiscent of a classic campfire s'more but better.

Ingredients
For the Graham Cracker Crust:
1 ½ cups finely crushed graham cracker crumbs
¼ cup white sugar
6 tablespoons unsalted butter, melted
For the Ice cream layer:
1 (28 ounce) package chocolate ice cream, slightly softened
For the Marshmallow topping:
2 cups miniature marshmallows, or enough to cover the top
Preparation
Prepare the crust: Combine graham cracker crumbs, sugar, and melted butter in a bowl.
Press the mixture evenly into the bottom and sides of a 9-inch pie dish. Refrigerate the crust for at least 30 minutes to chill.
Add the ice cream: Fill the chilled crust with the slightly softened chocolate ice cream, smoothing it with a spatula.
Top with marshmallows: Arrange a ring of mini marshmallows around the inside of the crust, and then cover the top of the ice cream with the remaining marshmallows. Gently press the marshmallows into the ice cream.
Freeze: Freeze the pie until it is very firm, at least 2 hours.
Toast the marshmallows (optional): Just before serving, use a kitchen torch or broiler to lightly brown the marshmallows, creating a toasted s'mores flavor.
Serve and enjoy!
