Ingredients
For the Broth:
• 4 cups chicken broth
• 1 cup water
• 1 tablespoon sesame oil
• 1 tablespoon vegetable oil
• 4 cloves garlic, minced
• 1 tablespoon fresh ginger, grated
• 2 tablespoons soy sauce
• 1 tablespoon miso paste (optional, for depth)
• 1 tablespoon gochujang (Korean chili paste) or sriracha
• 1 teaspoon chili flakes (adjust to spice preference)
• 1 tablespoon rice vinegar
• 1 teaspoon honey or brown sugar
For the Chicken:
• 1 boneless, skinless chicken breast (or thighs)
• 1/2 teaspoon salt
• 1/2 teaspoon black pepper
• 1 teaspoon paprika
• 1 teaspoon chili powder
• 1 teaspoon soy sauce
For the Ramen & Toppings:
• 2 packs ramen noodles (discard seasoning packets)
• 2 soft-boiled eggs (optional)
• 1/2 cup sliced mushrooms (shiitake or cremini)
• 1/2 cup bok choy or spinach
• 1/4 cup corn kernels (optional)
• 2 green onions, sliced
• 1 teaspoon sesame seeds
• Nori (seaweed sheets), for garnish (optional)
Preparation
Step 1: Prepare the Chicken
1. Season the chicken with salt, pepper, paprika, chili powder, and soy sauce.
2. Heat a pan over medium-high heat and add 1 tablespoon vegetable oil.
3. Cook the chicken for 4-5 minutes on each side until golden brown and cooked through.
4. Remove from heat and let rest for a few minutes before slicing thinly.
Step 2: Make the Broth
1. In a large pot, heat sesame oil over medium heat.
2. Add minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
3. Stir in gochujang, soy sauce, miso paste, and chili flakes. Cook for another minute.
4. Pour in the chicken broth and water, stirring well.
5. Bring to a simmer and let cook for 10-15 minutes to develop flavor.
6. Add rice vinegar and honey to balance the spice.
Step 3: Cook the Noodles & Vegetables
1. In a separate pot, cook ramen noodles according to package instructions. Drain and set aside.
2. Add mushrooms and bok choy to the simmering broth and cook for 3-5 minutes.
Step 4: Assemble the Ramen
1. Divide cooked ramen noodles into serving bowls.
2. Ladle the hot broth over the noodles.
3. Top with sliced chicken, soft-boiled eggs, corn, and green onions.
4. Sprinkle with sesame seeds and add a sheet of nori if desired.
