Ingredients
2 large eggs
1/2 cup milk (or more as needed)
1/2 cup water
1/4 teaspoon salt (or to taste)
1 cup all-purpose flour
2 tablespoons butter, melted
Preparation
Step 1: Whisk together the eggs, milk, water and salt in a large mixing bowl. Add the flour and melted butter, then whisk until the batter is smooth and pourable.
Step 2: Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the pan, using about 1/4 cup for each crêpe. Tilt the pan in a circular motion so the batter coats the surface evenly.
Step 3: Cook until the top of the crêpe is no longer wet and the bottom is light brown, about 1 to 2 minutes. Run a spatula around the edge to loosen, then flip and cook until the other side is lightly browned, about 1 minute more.
Step 4: Garnish as desired and serve warm.
